La Baleine's sea salt harvesting process begins in March when the clear waters of the French Mediterranean are let in to the salt marshes. After many months of brine curing and crystallization the salt is then harvested in September. An elemental process of wind and water, this salt is more than the sum of its parts. In addition to providing the best sea salt possible, La Baleine is committed to low environmental impact, maintaining the salt flats as important ecosystems for many species of plants and birds.
