Not really couscous at all, Ptitim was invented as a rice alternative during the years of austerity in Ben-Gurion's term as Israeli Prime Minister from 1949-59. Distinctively spherical, this pasta differs from regular couscous in its size, type of wheat, and fabrication process. Israeli "couscous" is uniquely toasted over an open flame oven which allows it to absorb liquid while remaining "al-dente". It makes a perfect side dish to meat, poultry, or fish, but can also can be enjoyed as a delicious main course mixed with vegetables, or your favorite pasta sauce. This product is also great as a cold pasta salad.
