Gianni Calogiuri's family has produced their Vincotto Originale "cooked wine" from locally grown Negroamaro and Malvasia Negra grapes in Puglia, Italy since 1825. The juice of the old vine grapes is aged for four years in oak barrels to produce this "exceptionally organoleptic" vinegar.
The Fig Vincotto is a versatile dressing. It can be used as a condiment over roasted and boiled meats, carpaccio, grilled fresh water fish, minestrone, cheese, sorbet, fruit salad and ice cream.
No added preservatives, alcohol, coloring, or sugar.
