Its shape is compared to that of a pineapple or bufone (dunce cap). The cheese is made from pasteurized cow's milk and is hardwood-smoked for about two weeks giving it a taste similar to Italian Scamorza - a mild, aged, smoky Mozzarella type cheese. It should have a soft, creamy texture on the palate.
