Created by the Cooperativa Latte Brusche (a dairy cooperative in Veneto), Piave gets its name from the Piave River, which runs from the Alps down to the plains just northeast of Venice. Piave is made from milk taken from Swiss Brown cows that graze along the river. The aged version of the cheese is slightly harder in texture with full flavor, nutty nuances and hints of caramel. It is a great parmesan substitute if you are looking to try something different for grating over pasta. The younger version of this cheese is slighty softer than the aged, and has a sweet, fruity flavor.
