Spain tends to triumph in the area of sheep’s milk cheeses and Malvarosa is no exception. The milk comes from the Guirra sheep (an almost extinct breed at one point) which are found in Valencia. This milk imparts a sweet and buttery flavor, very delicate and widely appealing. The cheese is aged in cheesecloth, you can tell from its shape and the folds left in the rind once the cloth is peeled away. Don’t be fooled by the hard rind, the cheese inside is only semi firm and so delicious.
