Similar to Epoisses, but not as strong, Langres is a semi-soft, washed rind cheese that starts out firm and supple, but becomes creamy as it ripens. It has a complex array of flavors ranging from creamy and savory to tangy and zesty. The cheese has a designed concave top, where you are meant to pour a little Champagne, and let it soak into the cheese. Delish!
