Of recent origin, and developed by dairy cooperative Nulvi of San Pasquale, Sardinia this firm sheep's milk cheese is not too salty, with an almost sweet finish. The taste highlights the scent of pastures of maquis (consisting of evergreen shrubs and sage and juniper) the sheep eat while grazing. It is similar in texture to cow's milk cheeses such as Parmigiano Reggiano and Grana Padano and grates very well. It is a table cheese, matured for several months. Each wheel weighs from 10 - 15 lbs. It is semi- hard when young, and much harder when aged.
