Crème Fraîche means "fresh cream" in French. It can be viewed as the European counterpart to sour cream; however, it is slightly thicker, and less sour. It will not break or curdle when heated or boiled, a great benefit for soups and sauces. Plop on top of fresh fruit, in certain soups, or as a dip, just for starters! Great to dollop on caviar and blinis!
