Extremadura, Spain

Originated in Casar de Caceres (hence the name Torta del Casar), this cheese is now produced in an area of Spain called "Extremadura" where hot summers and short winters give rise to a variety of herbaceous plants. Entrefina and Merina sheep graze upon these plants, yielding a flavorful milk that gives Torta del Casar it’s characteristic pungency. Add in thistle rennet (used in place of animal rennet) and salt, wait 60 days and you have a rich, creamy, almost spoonable, full (and we mean FULL) flavored cheese. Get this one when you can, as there are only 8 dairies that make it!
