Ripened for only 10 to 15 days before being shipped to market, La Tur begins as a slighty firmer cheese, but with additional ripening, becomes soft and oozy. With 55-60 percent fat content, it can almost qualify as a double-crème. La Tur has a rich, creamy, savory flavor with tangy and mushroomy traits.
