Aged for 12 years! This totally unique Wisconsin cheddar has amazing depth of character, and little crunchy crystal bits, like fine parmesan. It is strong and very flavorful. You can use it like you would use any cheddar, but we prefer just nibbling it plain. *Artisanal Award Winner '09
