Rocca Di Castagnoli
Its good to be reminded of how delicious Chianti can be as it can often be forgotten. The Chianti from Rocca Di Castagnoli is well made and with a lot of care. Their vineyards sit atop the Chianti Classico region, right in the center of Gaiole in Chianti. Itís just southeast of Florence in the province of Siena. I suggest taking a train trip to see this area next time you are in or around Florence. The wines of Chianti are honest to their local food and drink culture. Chianti pairs well with local Tuscan cheeses, beef tartare, roasted pork, hare or giant Florentine steaks.
Pecorino Toscano is simply one of the best cheeses you can find. Made from full fat ewes milk, it can be aged anywhere from a month up to a year or even more depending on how firm or dry you like your cheese. Personally, I prefer it around 6 months (that's the one we carry). I like it with figs in the summer and a little honey in the winter. Perfect with Chianti or other Sangiovese based wines.
