As August heats up you'll want something to cool you down. Nothing will cool and refresh you better than a chilled bottle of Grüner Veltliner (except Champagne, of course). Grüner has been trending for a few years now and it's easy to taste why. It's clean, has plenty of mineral and is never too fruity.
The producer Salomon makes quite a few Grüner Veltliners but I think this one is my favorite. It's a Single Vineyard and has a bit more complexity and finesse than some other wines that he and his neighbors in the Kremstal region of Austria make. It also gives it that extra quotient of wine nerdyness so you have something to talk about with your friends while you're finishing the bottle.
Enjoy as an appertif, with weisswurst or, of course, a little cheese.
(*side note- The Salomon winery was founded in 1792; Norbert's birth year. Which is probably why he likes this wine so much.)

Etorki is so good that we sometimes forget about it. It's delicious, simple smooth and everyone likes it. Made from 100% sheeps milk from the Basque region, it's the perfect cheese to introduce sheeps milk to a novice and also the perfect cheese to have with a nice glass of Grüner. Enjoy.
