This past week, we had the chance to pick the cellars of one of our great clients. We found some absolute gems. Wines that are pristine, well kept, and havent been moved since they were purchased from us, over 30 years ago.
One of my favorites was the 1978 Château Beychevelle. A vintage that was wonderful in Pauillac and Saint Julien. Over time, it has been overshadowed by the 1975s and 1982s, and later the '85s and '86s. The Beychevelle is pristine and is drinking as well as it ever will. It has held the test of time and this is a unique opportunity to snatch up a piece of history and enjoy a fully mature Bordeaux for a mere fraction of the price of the same wine at current release.

From the mountains of the Jura comes a very silky cows milk cheese. It’s rich, elegant and simple enough not to interfere with an aging wine. Slightly salty and nutty, this cheese is excellent for melting on bread or with a glass of mature Bordeaux.
