Ever want to meet a winemaker? Well, we can't promise you the winemaker, but we can give you the blender of this ready to go Merlot. Norbert blended this wine from different parcels of vineyard on the Sylvester property. It was aged for 18 months in new and used French oak barrels, just like they do in Pomerol.
It's a great wine for a great vintage and, obviously, if Norbert blended the wine, it goes great with cheese. The wine already comes with a few years of bottle aging from extended collaring so come grab one on your way home for tonight's dinner.
Manchego Sheep Spain $25/lb
This is a great cheese...it goes with almost anything, but I do recommend it with the Merlot. It is made outside of La Mancha, Spain, from the ewes of the La Mancha breed and aged for 6 months. Hence the name Manchego!

Jamon Serrano Spain $45/lb
Made from the slightly domesticated white footed pig in the northern mountains. Serrano literally means "mountain highlands" which is where the Landrace breed of pig is native to in Spain. Try some thinly sliced with a little Manchego and a glass of Sylvester.
