At The Cheese Store, we often joke about Champagne. These jokes usually take place very early in the morning, sometimes in the afternoon, and, occasionally, at night. The joke is more serious than kidding. "Hey Norb, feel like some bubbly?" Are we lushes for Champagne? Ha! Were The Beatles a good little band?
Yes, we love Champagne. For us to say a $48 bottle is bargain - you know it is. Of the bigger houses, this is the best. It has a classic nose of bread, yeast, light honeysuckle and minerals. There is no mistaking it for anything other than great Champagne. It's definitely smooth, especially when you get to the third glass.
All we can say is "Thank you, Joseph Henriot!" I recommend it with a little bit of cheese before dinner, after dinner, even at lunch and breakfast on the weekends...though they do make half bottles for weekday breakfast!

Located about an hour from Paris, the Ile de France is the home of Brie, located in the Champagne district. This triple crème cheese, at over 75% butter fat, is like the world's best room temperature butter. I recommend it on a fresh, warm baguette with a big cold glass of bubbly.
