The Domaine Phillipe Gilbert is a family run biodynamic vineyard in the Menetou -Salon appellation in France's Loire Valley. The family farms 67 acres of vineyards planted to Pinot Noir and sauvignon blanc situated north of Bourges.
Brothers Jean-Phillipe and Phillipe produce one of my favorite Sauvignons from a special 2.5 acre plot called "Les Renardiéres". They only produce 38 hectoliters which evens out to about 5,000 bottles. The wine experiences 11 months in cask and was bottled in February of 2008. Now, with 4 years in bottle, the wine is drinking at its peak. It has a golden hue and smells of white flowers and citrus. It is the perfect expression of mature Sauvignon Blanc.

One of the most simple and famous of all of France's cheese. This goats milk cheese is made all over the country. It is most popular in the Loire Valley and the south of France. Its small size makes it easy to travel and the perfect amount for a snack with a glass of wine. They are delicious and creamy when young and perfect for grating when aged, pairing perfectly with dry white wines.
