Named for the wild winds that blow across this part of Australia, Roaring Forties Blue Cheese is made by the Kings Island Dairy, south of Melbourne. The island provides a pristine environment and a year round growing season, enabling the cows to produce a sweet, rich milk. Roaring Forties Blue is a full-flavored blue with a sweet, nutty character. The cheese is matured in blue wax, thus retaining its moisture and creating a smooth and creamy texture. A unique and exciting cheese style that was awarded the Best Cheese at New Yorks Fancy Food Show 2000.
